Toni is the managing director of Fundação Alícia, one of the largest research centers in the world, which brings together science, gastronomy and responsible eating. He graduated in Gastronomy in Barcelona and Toulouse and is dedicated to teaching and journalism. He also works as a researcher at the Food Observatory at Universitat de Barcelona. He usually focuses on Catalan cuisine, but now he has been traveling with local chefs and cooks—both professionals and amateurs—to learn about culinary traditions from all around the world.
