Empirical Spirits

Born and raised in New York (USA), Williams began working in restaurants shortly after graduating from university. Among the places he has worked are the Aquavit and WD-50 (both in New York), The Fat Duck (England) and Noma (Denmark). Two years ago, he left the kitchens and helped to found Empirical Spirits, a distillation laboratory that researches the future of flavors by creating drinks from ingredients either ignored or unknown to the general public.
